 Technique Essentials: Easy/Peasy Crispy Wings

Indulge in Easy Peasy Crispy Wings – a quick and tasty snack that's perfect for any occasion. Such a pretty evening yesterday that I decided to stay up and have a putter in the kitchen. Actually, I accomplished two things: I finished the parquet flooring for my bookshelf diorama and made this recipe. Win/Win. This is not so much about what you put on the chicken, but how you can make crispy oven-baked wings with an absolute minimum of effort. So, you ready… Let’s get into the kitchen.

Technique Essentials: Easy/Peasy Crispy Wings

Cook time: 1 Hr 30 Min  Prep time: 10 Min  Serves: 1 - 2
Ingredients
PLAN/PURCHASE
1 lb chicken wings, split, tips removed, about a dozen
1 Tbsp sweet butter, unsalted, melted
1 Tbsp olive oil, extra virgin variety, or sesame oil
ADDITIONAL SPICE SUGGESTIONS
salt, kosher variety
black or white pepper, freshly ground
garlic powder
paprika, mild, hot, or smoked
cayenne pepper
whatever floats your boat
Directions
1. PREP/PREPARE
2. This recipe works best when you have a baking sheet fitted with a wire rack. This helps to crisp the wings top-and-bottom, without having to turn them over.
3. Gather your ingredients
4. Place a rack in the upper-middle position and preheat the oven to 400f/205c.
5. Place a piece of parchment paper into a rimmed baking sheet, and then add a wire rack (if you have one).
6. Add the melted butter, oil, and any other spices, to a bowl and toss the wings until evenly coated.
7. Lay them out on the baking sheet, being sure to give them a bit of space.
8. THE CRISPING TECHNIQUE Add the wings to the oven and bake for 30 minutes. If you are not using a rack, turn them over halfway through the baking process.Turn the heat down to about 170f/75c and leave them in the oven for up to an hour. If you are not using a rack, turn them over halfway through the baking process. You will know they are ready when the skins begin to turn a crispy golden brown. The low temperature helps to dry out and crisp the skin, while preventing the meat inside from overcooking.
9. PLATE/PRESENT
10. Serve with your favorite dipping sauces. Enjoy.
11. Keep the faith, and keep cooking.
