Spinach Artichoke Dip Bacon Stuffed Chicken Thighs



Ingredients
4 lg boneless skinless chicken thighs
salt and red pepper flakes
4 oz cream cheese softened
1/2 c frozen spinach defrosted drained and squeezed dry
2 c garlic minced
1/3 c canned artichoke hearts drained and chopped
1 c mozzarella cheese divided
4 strips precooked bacon cut in half
2 Tbsp olive oil
fresh parsley chopped
Directions
1. Preheat oven 400 degrees. Line a baking sheet with foil.
2. Cut 5 slits in each chicken thigh not all the way through. Place on baking pan and season with salt and red pepper flakes to taste.
3. Mix the cream cheese, spinach, garlic artichokes and 1/2 cup mozzarella together.
4. Fill 3 slits on each chicken thigh with the dip alternating with a bacon slice in between. Top with remaining Mozzarella cheese and drizzle with olive oil
5. Bake for 30 minutes. Garnish with parsley
