Simplified Butter Chicken


Create a Simplified Butter Chicken that's full of rich and savory flavors. A quick and easy twist on classic Indian cuisine. All the flavors of the traditional Butter Chicken, easy enough for any week night dinner.

Simplified Butter Chicken



Ingredients
2 lb boneless/skinless chicken thighs
1 c full fat plain greek yogurt
2 Tbsp garam masala indian seasoning
1 stick butter
1 Tbsp olive oil
1 md onion, chopped
3 clove garlic, smashed
1 tsp ginger
1/2 c cream
1 tsp chili powder
salt and pepper
Directions
1. Start by cutting chicken into bite size pieces, season with 1 tablespoon of the garam masala, add the cup of full fat plain Greek yogurt, combine well and place in a plastic bag. Marinade a few hours or over night.
2. In a non stick skillet put half stick of butter and the olive oil, over medium heat cook the chicken 5 mins.
3. Remove the chicken, set aside, in same skillet, add onions, garlic, ginger and tomatoes, cook about 5 mins.
4. Add in a blender and blend till to make the sauce
5. Add back into skillet, add remainder butter & garam masala, add in salt/pepper/chili powder & cream.
6. Add chicken back in, stir and cover, simmer about 30 mins. Serve with white rice & warm roti or warm Naan bread.
