Shortcut Chicken Parmesan

Shortcut Chicken Parmesan

Create a quick and delicious Shortcut Chicken Parmesan. A cheesy and flavorful Italian-inspired dish. This recipe is so quick and easy, but also so very delicious. It's always been one of my grandkids' favorites. Simply bake some chicken strips, pour spaghetti sauce over them, throw some cheese on top and bake for a few more minutes. Viola! Your main dish is ready. Just serve with garlic Texas toast and a small green salad or steamed broccoli on the side (and a glass of Chianti for the adults, lol!) (P.S.) Just remember, the better your ingredients are, the better the finished product will be.

Shortcut Chicken Parmesan

Cook time: 30 Min  Prep time: 10 Min  Serves: 6
Ingredients
olive oil or spray for dish
1/2 pkg frozen breaded chicken breast strips (approx. 3/4 lb.)
1 jar spaghetti sauce, divided (24 oz. your fave)
1 heaping c whole milk mozzarella cheese, shredded
1 Tbsp grated parmesan cheese
some fresh basil, torn or chiffonade, optional
Directions
1. Gather ingredients. Shred cheeses. Preheat oven per package instructions.
2. Lightly oil a 10"x10" baking dish (or dish of similar size.)
3. Place chicken pieces in prepared dish, sides touching, using as many pieces as will fit, to make a single layer.
4. Bake in preheated oven according to package time and temperature (my favorite brand, Perdue, bakes at 425 for 20 minutes.)
5. Remove from oven. Pour about 1 1/2 cups spaghetti sauce over the hot chicken. Reserve remainder of sauce for serving.
6. Scatter 1 heaping cup of shredded mozzarella over chicken and sauce.
7. Sprinkle 1 tablespoon parmesan cheese over all.
8. Return dish to oven set at 425 degrees F ; bake for additional 7 to 8 minutes, until cheese is melted and beginning to bubble.
9. Meanwhile, warm the remaining sauce in the microwave (covered) or in a small pan on the stove, for serving with the chicken, if desired.
10. Garnish with fresh basil, if desired. Serve immediately. Cover and refrigerate leftovers.
