Roasted Chicken Thighs with Herb & Almond Pesto

Ingredients
4 lg bone in chicken thigns
2 tsp salt
4 scallions chopped
1 c each basil, parsley and cilantro
3 clove garlic
1/2 c sliced almonds
2 Tbsp lemon juice
1/4 c olive oil
Directions
1. Preheat the oven to 450 degrees. Place the chicken thighs on a sprayed baking sheet.
2. Add the salt, scallions, herbs, almonds, garlic, and lemon juice in a food processor.
3. Process while drizzling the olive oil in until thickened.
4. Loosen the skin and rub the pesto under the skin and all over the chicken Bake for about 30 to 40 minutes until juices run clear.
