 Roasted Chicken Thigh W Onions, Garlic & Honey

Roasted Chicken Thigh w Onions, Garlic & Honey

Cook time: 30 Min  Prep time: 20 Min  Serves: 2-4

4 bone in chicken thighs patted dry
4 clove garlic minced
1 md sweet onion thinly sliced
1 c white wine
1 bay leaf
1 cinnamon stick
2 Tbsp honey
2 Tbsp butter
salt and pepper
1. Season the chicken thighs with salt and pepper. Preheat the oven 450 degrees. Place the chicken in a baking dish skin side up. Set aside.
2. In a saucepan add a little oil and add the onions and garlic season with a little salt and pepper. Cook until softened. Add the white wine, bay leaf, and cinnamon stick. Bring to a boil and reduce to a simmer and let simmer until almost all liquid has evaporated. Discard the cinnamon stick and bay leaf. Stir in the honey and butter. Pour over the top of the chicken.
3. Bake for about 30 minutes turning the chicken twice.
