POLLO PARMIGIANA DELLA CUCINA is described on the menu as a Boneless cutlet of chicken lightly breaded and gently fried, topped with marinara sauce and baked with mozzarella. This is my home version of that dish! I hope you enjoy it!

Pollo Parmigiana Della Cucina




Cook time: 20 Min  Prep time: 10 Min  Serves: 4-6
Ingredients
2-3 lg chicken breasts
canola oil
2 cups flour
salt & pepper to taste
6 slices fresh mozzarella
your favorite spaghetti sauce
Directions
1. Slice chicken breasts in half, through the center (butterfly style, but completely in half.)
2. Pound chicken to 1/4 inch thickness with a mallet.
3. heat a half inch or so of oil in a large skillet over medium-high heat.
4. Put flour on a plate.
5. dredge chicken in flour and brown in oil. When browned place each piece on a foil lined baking sheet.
6. Salt and pepper each piece, both sides, then top with fresh mozzarella.
7. Ladle a bit of your favorite marinara sauce over each piece.
8. Bake in a 350 degree oven just until cheese is melted.
9. Serve with a side of your favorite pasta!
