Parmesan Dijon Chicken Leg Quarters



Cook time: 1 Hr  Prep time: 10 Min  Serves: 4-6
Ingredients
6 chicken leg quarters
1 1/2 c fresh breadcrumbs
1/2 c fresh parmesan cheese grated
3 Tbsp fresh parsley chopped
2 tsp onion powder
1/2 Tbsp each sweet paprika and oregano
2 tsp salt
1 tsp pepper
1 1/2 stick butter
1/4 c dijon mustard
Directions
1. Preheat oven 350 degrees. Spray a baking dish large enough to hold the chicken.
2. Combine the breadcrumbs, parmesan, parsley, onion powder, paprika, oregano, salt and pepper and place it on a flat plate
3. Melt the butter in a saucepan on the stove and mix in the mustard.
4. Brush the chicken leg quarters with the butter mustard mixture then roll in the breadcrumb mixture.
5. Bake for about 1 hour until golden and cooked through.
