Moo Shu Chicken

Moo Shu Chicken



Cook time: 15 Min  Prep time: 20 Min  Serves: 4-6
Ingredients
FOR SAUCE
1/2 c garlic chili sauce
1/2 c water
4 tsp sesame oil
1 Tbsp soy sauce
1 Tbsp corn starch
FOR FILLING
2 c 3 large cloves garlic, minced
2 Tbsp peanut oil
1 pkg cole slaw mix, with or without carrots
1/2 can bamboo shoots, julienned
3 green onions, sliced
1 lb boneless, skinless chicken thighs, trimmed of all visible fat
6 (street taco size) tortillas, or butternut lettuce leaves.

Directions
1. Mix together sauce ingredients and cook over high heat in a small sauce pan until thickened.
2. Heat peanut oil in a wok. Add chicken chicken. Cook until done.
3. Add in cabbage, sliced green onions, garlic and bamboo shoots and 1/2 of sauce. Cook until softened.
4. Spoon chicken mixture down the center of tortillas or lettuce leaves.
5. Garnish with sliced green onions and serve with more sauce for dipping.
