Lemony Peppery Chicken

Cook time: 20 Min  Prep time: 10 Min  Serves: 4
Ingredients
2 boneless skinless chicken breasts
2 Tbsp flour
1 1/2 tsp lemon pepper (careful if yours has salt in it)
1 Tbsp canola oil
2 clove garlic, minced
1/2 c chicken broth
1 Tbsp butter
1 tsp lemon zest
1 tsp fresh lemon juice
1 Tbsp flat leaf parsley, chopped
freshly ground black pepper
Directions
1. Slice each chicken breast into two fillets, so that they are thinner pieces. Place the flour and lemon pepper in a small bowl and mix. Sprinkle the flour mix over all sides of the chicken, rubbing it in until fully coated.
2. Place a large skillet over medium heat and add the oil. When very hot, add the chicken and cook until each side is golden brown, about 4-5 minutes per side. Transfer chicken to a plate and keep warm.
3. Add the butter and garlic to the skillet, and cook for about a minute, stirring constantly to avoid burning. Add the chicken broth and whisk to deglaze the pan and bring up all the brown bits. Add the zest and lemon juice, bring to a simmer and let cook for 3-5 minutes to reduce a little bit.
4. Taste and adjust seasoning if necessary. Return the chicken to the skillet and spoon the sauce over. Continue cooking for a few minutes until the chicken heats through. Season with freshly ground black pepper to taste. Garnish with the chopped parsley. Serve with noodles or rice.
