Katsu Chicken: Japanese Fried Goodness

Katsu Chicken: Japanese Fried Goodness

Ingredients
1 lb boneless chicken thighs
1 1/2 c flour
3 eggs
3 c panko bread crumbs
TONKATSU SAUCE
1/2 c ketchup
2 Tbsp soy sauce
1 Tbsp brown sugar
1 Tbsp mirin
2 tsp worcestershire sauce
1 tsp grated ginger
1 clove garlic minced
Directions
1. Mix the ingredients for the Tonkatsu sauce together and set aside.
2. Place the chicken between plastic wrap and pound to make it more unified in size. Cut into strips. Salt them and then set if fridge on baking sheet for 1 hour.
3. Set up three dredging stations. one add the flour. Beat the eggs and add to a station then put the Panko in the third station. Preheat oven 350 degrees.
4. Add about 1/2 inch of oil to a large skillet. Working in batches. Dredge the chicken in the flour, then egg and then dredge in the panko .
5. When the oil is very hot fry the chicken pieces in batches turning to get a nice brown color. Remove the chicken to a baking sheet.
6. place in oven while completing all the pieces of chicken. Serve with Tonkasu sauce for dipping.
