Instant Pot Chicken Adobo

Instant Pot Chicken Adobo


Cook time: 30 Min  Prep time: 5 Min  Serves: 4-6
Ingredients
8 chicken thighs
2 Tbsp vegetable oil
1/3 c soy sauce
1/4 c each sugar and white vinegar
5 clove garlic minced
2 bay leaves
1 md yellow onion diced
scallions and rice for serving
Directions
1. Season the chicken with salt and pepper. Add oil to instant pot. Select saute and brown the chicken on both sides. Work in batches of 4.
2. Add the chicken back to the instant pot and add the soy sauce, sugar, vinegar, garlic, bay leaves, and onion.
3. Place the lid and select pressure cook on high for 10 minutes. Use quick release. Select saute again and bring to a boil and let sauce reduce to a dark brown color about 20 minutes. Set the chicken aside. Strain the sauce discarding the solids.
4. Top the rice with chicken thigh and ladle sauce over and garnish with scallions.
