Grilled Chicken Tacos


Enjoy the goodness of Grilled Chicken Tacos. A Mexican-inspired delight that's perfect for a quick meal. These were so good and comes together quickly. We were surprised we could only do one taco a person, so we had extra mix for leftovers which was just as good the next day. Second day after grilling in butter we melted some cheese on top and put under the broiler for a couple minutes. Definitely will do these again!

Grilled Chicken Tacos


Cook time: 45 Min  Prep time: 15 Min  Serves: At least 3
Ingredients
4 chicken breasts
1 lg chicken broth
1 lg red bell pepper
11 lg green bell pepper
1 red onion
1 can crushed tomatoes
1 c water
cajun seasoning
adobo powder
1 white pepper
smoked paprika
flour tortillas
butter for saute and frying
shredded cheese (i use mozz and cheddar)
Directions
1. Boil chicken breasts in broth til cooked through and easy to shred
2. Remove from broth and shred chicken. Set aside
3. While chicken is cooking, slice up peppers and red onions in thin strips. I
4. Saute peppers and onions in skillet with oil and butter til tender.
                 5. Add can crushed tomatoes, shredded chicken, and water.
6. Add seasonings, (adobo, Cajun seasoning, paprika) to taste. Allow to cook for several minutes til we'll blended.
7. Melt butter in second skillet and dip tortilla in chicken and pepper mix. Place dipped side up in skillet. Add shredded cheese, chicken mixture to tortilla and fold in half. Fry both sides and serve with Pico, sour cream, as desired.
