Grilled Chicken Kabobs




Cook time: 35 Min  Prep time: 30 Min  Serves: 4
Ingredients
1 1/2 lb chicken breasts
1/2 sweet onion
1/2 sweet red pepper
1/2 sweet green pepper
8 whole fresh mushrooms
1 sm zucchini
1 sm yellow squash
6 md cherry tomatoes
roasted red pepper Italian with Parmesan salad dressing
blackened seasoning
garlic salt
Directions
Test Kitchen Tips: We couldn't find the roasted red pepper dressing. Substituting Italian dressing worked fine.
1. Wash veggies. Cut peppers into 1-inch pieces; cut zucchini and squash into 1/2-inch thick slices.
2. Cut chicken breasts into 2-inch cubes.
3. Skewer veggies and meat, alternating to taste. Place in a shallow baking pan.
4. Drizzle roasted red pepper Italian with Parmesan dressing over prepared skewers.
5. Sprinkle with blackened seasoning and garlic salt.
6. Marinate for 30 mins to 1 hour.
7. Grill over low heat for 30 to 40 minutes.
