Fried Chicken Salad


Enjoy the crispy and satisfying Fried Chicken Salad. A delightful combination of textures and flavors. In my old neighborhood I used to frequent a restaurant that served a fried chicken salad that I was addicted to. Since I live too far away anymore, I've played around with duplicating it at home. I think this is pretty close. At the restaurant they would drizzle the salad with both French dressing and Honey Mustard dressing for a wonderful taste sensation. Ranch works well too. I usually fry one chicken breast in bite-sized pieces which is plenty for 2 salads. But you could also use frozen chicken tenders if you prefer. I've even tried it with bbq chicken that is good too. Fried Chicken Salad



Cook time: 10 Min  Prep time: 20 Min  Serves: 2
Ingredients
FOR THE CHICKEN:
1 skinless boneless chicken breast, see note in intro
1 egg, slightly beaten
1 Tbsp water (for the egg)
1/4 c all purpose flour (or a little more to just coat the chicken)
vegetable oil, for frying
salt and pepper, to taste
FOR THE SALAD:
4 c lettuce, i use a purchased salad mix
1 md tomato, cut into wedges
2 hard-boiled eggs, quartered
1/2 c cooked corn
1/4 c bacon, cooked and crumbled
1/2 avocado, sliced or cubed, optional
sliced green onions, for garnish
honey mustard dressing, for drizzling, optional
french dressing, for drizzling, optional
ranch salad dressing, for drizzling, optional
Directions
1. For the chicken: Place the flour, salt and pepper in a shallow dish or bowl.
2. Whisk the water and egg together in a separate shallow bowl and set aside.
3. Dip each piece of chicken in this order: first into the flour, then into the egg, then back into the flour.
4. Heat oil in a skillet over high heat. To see if your oil is hot enough for frying, dip just the end of one of the pieces of chicken into it. If it sizzles it's hot enough.
5. Once your oil sizzles as soon as your meat touches it, gently add a few pieces at a time.
6. Fry for 3-4 minutes then turn heat down to medium. Turn the chicken until it's browned on all sides.
7. Move chicken to a paper towel to drain.
8. Arrange the rest of the salad ingredients on a plate or in a bowl. Top with the chicken.
9. Add dressing(s) and enjoy.
