Cream of Chicken & Rice Soup

Cook time: 30 Min  Prep time: 5 Min  Serves: 6-8
1 c long grain white rice
2 box (32 oz. each) chicken stock or 2 quarts homemade
1/8 tsp cayenne pepper
1/4 tsp nutmeg
salt & pepper to taste
1 c heavy whipping cream
2 c cooked, diced chicken
1. Rinse the rice, then drain and add it to boiling water. Boil for 5 minutes then drain.
2. Boil the chicken stock and add the rice. Lower the heat to simmering and simmer, covered for 25 minutes.
3. Season with salt, pepper, cayenne, and nutmeg, then add the cream and bring to a simmer for 5 minutes longer.
4. Stir in the cooked, diced chicken and serve immediately.
5. NOTE: It will begin to thicken within a minute of leaving the heat.
