Chicken With Strawberry Sauce


Elevate your dinner with Chicken With Strawberry Sauce. A sweet and savory dish that's a unique culinary experience. I know it sounds like a strange combination, but it will surprise you with its sweet zesty flavor. I love trying new mixes and this one really struck a chord. My husband loves it, too! (Now, if I could just get the rest of my family to try it, lol.) This recipe was modified from a magazine to suit us.

Chicken With Strawberry Sauce



Cook time: 45 Min  Prep time: 10 Min  Serves: 2
Ingredients
1 Tbsp corn starch
1 Tbsp granulated sugar
1/8 tsp ground nutmeg
1 c diced fresh strawberries
1/2 c white wine
2 tsp minced fresh mint
2 boneless skinless chicken breasts
salt and pepper, to taste
Directions
Test Kitchen Tips: If you do not want as much of a minty flavor, cut the mint back to 1/2 tsp.
1. Preheat oven to 400 degrees F. Prepare the chicken breasts for baking, Pat the meat dry. Lightly sprinkle chicken with salt and pepper.
2. Spray a non-stick cooking spray in a baking pan. Add the seasoned chicken.
3. Bake chicken for 20 minutes on one side.
4. While chicken bakes, mix corn starch, sugar, and nutmeg with 1/2 cup of water. Mix well.
5. Add strawberries and wine to the sauce. Bring to a boil.
6. Once the sauce is boiling, reduce the heat. Simmer for about 5 minutes.
7. Then add the mint.
8. When the chicken had baked for 20 minutes, turn it over and sprinkle lightly with salt and pepper. Continue to bake for 15 - 20 more minutes until the internal temperature reads 165 degrees F.
9. When chicken is 165 degrees F, brush with SOME of the sauce (I use 1/4 or less) and continue to bake for 5 - 7 more minutes.
10. Spoon more of the sauce over and serve. I think white rice or wild rice is perfect under this! Any leftover sauce (we always have some) can be served over ice cream (hey, it's no weirder than over chicken!). We are also going to try it over baked brie.
