 Chicken In Hoisin Sauce Gravy

Chicken in Hoisin Sauce Gravy

1/2 tsp salt
1/4 tsp white pepper
2 tsp shaoxing wine or dry sherry
1 egg white
1 tsp cornstarch
1 tsp sesame oil
3 boneless chicken thighs cut into pieces
2 Tbsp olive oil
4 clove garlic minced
4 stalk scallions chopped
2 Tbsp shaoxing wine
2 Tbsp brown sugar
1/4 c hoisin sauce
cooked noodles or rice for serving
crushed peanuts for topping
1. Mix the ingredients for the marinade together. Add the chicken pieces and let marinate for 2 hours. Remove the chicken from the marinade and place in a strainer. Don't rinse just let it drain for about 10 minutes.
2. Heat the oil in a wok. Add the garlic and scallions. Stir fry about 30 seconds at the chicken about 4 minutes. Splash in the wine and let most evaporate. Stir in the hoisin sauce and brown sugar. Let cook about 5 more minutes.
3. Serve over rice or noodles garnished with chopped peanuts
