Chicken Empanadas Recipe



Cook time: 15 Min  Prep time: 25 Min  Serves: 4-6
Ingredients
10 empanada wrappers
2 c shredded chicken
1 c shredded monterey jack cheese
4 oz diced green chiles
1/2 red bell pepper, finely diced
1/2 c cream cheese
1 tsp cumin
1/2 tsp salt
1/4 tsp pepper
1/2 tsp paprika
1 egg
Directions
1. Preheat oven to 400 degrees.
2. In a large bowl, combine shredded chicken, cream cheese, jack cheese, green chiles, bell pepper, cumin, salt, pepper and paprika.
3. Spoon about 2 tablespoons of the chicken mixture onto one side of the empanada wrapper.
4. Fold the wrapper over top of the filling. Crimp the edges with a fork, being sure to seal the edges completely.
5. cut a couple of small slits or poke 2 small holes in top for venting.
6. and brush the top of each empanada with the egg wash.
7. Bake for 12-15 minutes until the tops of the empanadas just start to turn golden.
8. Let stand for 5 to 10 minutes before serving.
