 Chicken, Edamame, And Noodle Stir-Fry

Chicken, Edamame, and Noodle Stir-Fry

8 oz rice noodles
2 boneless skinless chicken cut into bite size pieces
1 Tbsp cornstarch
2 Tbsp vegetable oil
1 shallot sliced
2 clove garlic minced
1 c napa cabbage thinly sliced
1 c frozen shelled edamame
2 Tbsp red wine vinegar
2 Tbsp soy sauce
2 Tbsp brown sugar
hoisin sauce
fresh cilantro
1. Cook the noodles according to package direction. Drain and set aside
2. Toss the chicken with the cornstarch and season with salt and pepper. Heat one tbsp oil in a large skillet. Cook the chicken until browned. Transfers to a plate.
3. Add the remaining tbsp oil to the pan and cook the onion and garlic for 2 to 3 minutes. Add the cabbage and cook 2 to 4 minutes.
4. Add the edamame and stir fry 2 minutes. Mix the vinegar, soy sauce and brown sugar together. Add to the pan and add the noodles and chicken back in. Cook 3 to 5 minutes to all is warmed through
5. Serve garnished with cilantro and drizzle with hoisin sauce.
