CASHEW CHICKEN: Nutty Asian Fusion

CASHEW CHICKEN: Nutty Asian Fusion

Ingredients
1 Tbsp cornstarch
1 Tbsp brown sugar
1 c chicken broth, i used 1 t. better than bouillon
1 Tbsp soy sauce, light
3 Tbsp olive oil, extra virgin
1 sm chicken breast boneless and skinless
1/2 sm green bell pepper, cut in small strips
1 can water chestnuts,(8 ounce) drained
1 tsp grated gingerroot
2 green onions, sliced
1/2 c cashews, salted
Directions
1. Fix jasmine rice in rice cooker or on the stove.
2. Use a medium or large skillet. Cut up chicken breast in small pieces. Add 2 Tablespoons olive oil to skillet. Cook chicken on low until no longer pink.
3. Put paper towel on plate. Remove chicken from pan and let rest on plate.
4. Mix first 4 ingredients until smooth.
5. In same pan, heat remaining oil and stir fry green pepper, water chestnuts and ginger until pepper is crisp tender. About 3 - 5 minutes.
6. Stir broth mixture and add to pan with green onions. bring to boil. Cook and stir until sauce is thickened.
7. Stir in chicken and cashews. Heat through. Serve over rice.
