Asian Chicken Pasta Salad Recipes

Ingredients
1/4 c sesame seeds, lightly toasted
12 oz gluten-free rotini pasta
1/2 c vegetable oil
1/3 c gluten-free soy sauce or tamari
1/3 c seasoned rice vinegar
1 tsp sesame oil
1 tsp chili oil
1/4 c mirin (sweetened sake)
1/8 tsp garlic powder
1/8 c finely chopped onion
3 c chicken breast, cooked and shredded (about 1.5 lbs chicken breast)
3/4 c finely chopped or shredded carrot
Directions
1. Boil gluten-free pasta (I recommend Schar's) in lightly salted water according to the manufacturer's directions. Drain and rinse with cold water. Transfer to a large bowl.
2. While pasta is cooking, combine vegetable oil, soy sauce, rice wine vinegar, sesame oil, mirin, chili oil, and garlic powder. Shake or whisk until blended.
3. Add shredded chicken, chopped onion, chopped carrot, and toasted sesame seeds to pasta in the bowl. Toss lightly.
4. Pour marinade over and gently combine. Chill for one hour or more until ready to serve.
