Air Fryer Quick Chicken Parmesan

Ingredients
1 lb ground chicken
1/2 c + 2 Tbsp Italian bread crumbs (divided use)
3/4 c grated Parmesan cheese (divided use)
1/2 c chopped fresh parsley (or 1-2 Tbsp dried)
1/4 c plain yogurt
1 egg
2-3 tsp minced garlic
1 tsp salt
cooking spray
14 oz jar pizza sauce
3/4 c shredded mozzarella cheese
Directions
1. Preheat your air fry oven to 400 degrees.
2. In a mixing bowl, combine the ground chicken with 1/2 cup of the bread crumbs, 1/2 cup of the Parmesan, the parsley, yogurt, egg, garlic, and salt. Stir to combine.
3. Line your fryer pan with parchment paper. Form the chicken mixture into four half-inch thick patties, and place them on the paper. Sprinkle with remaining bread crumbs, and press lightly to set. Spray with cooking spray.
4. Bake patties in the air fryer oven for 12-14 minutes, until fully cooked.
5. Remove the pan from the air fryer and top each patty with 3 Tbsp of pizza sauce, 3 Tbsp of mozzarella cheese, and the remaining Parmesan cheese. Return to the oven for 2-3 minutes, until the cheese has melted.
6. Serve with the remaining sauce (warmed in the microwave) on the side.
